Classic Penne Arrabiata

Ingredients
- 3 cups sunbay penne pasta
- 2 tbsp olive oil
- 1 onion very finely chopped
- 2 garlic flakes, crushed
- ½ cup readymade Sunbay tomato puree
- 500gm tomatoes
- 2 tbsp fresh parsley
- 1 tbsp chopped celery
- ½ cup bell pepper chopped
- ½ cup broccoli florets
- ½ cup corns diced
- 1tsp spicefield oregano
- 1 tsp red chili flakes
- Salt and pepper as per taste
Instructions
- Boil the sunbay penne pasta as mentioned in cooking instructions and set aside
- Blanch the tomatoes by boiling in water for 4-5 min. Drain the water, peel and puree it. Sieve the puree
- Heat 1 ½ tbsp. of olive oil in the pan. Add the onions and garlic, cook until the onions turn light brown
- Add the readymade Sunbay tomato puree, oregano, salt, sugar and pepper. Add the vegetables and toss in the cooked penne pasta. Avoid using a spoon or spatula since it may cause the penne to break
- Garnish with parsley. Serve hot
